Haidilao started the intelligent restaurant in Beijing and tried to use automation and standardization to maintain service quality and increase efficiency. The task of this project is to design an updated tableware series to coordinate with the robotic arms and logistics platform in Haidilao intelligent restaurant. This new design aims to optimize both Haidilao restaurant intelligent kitchen system and user experiences, in the meantime improve the products visual appearance and display method of different types of food. The clients hope the new design can reflect the brand image and underline Haidilao innovative leadership role in the market.

海底捞是一家世界知名的专注于火锅的餐饮公司。几年前,海底捞在北京开了智慧餐厅,通过自动化以及标准化来保持服务品质和提升工作效率。本项目的任务是为海底捞智慧餐厅设计一套升级版餐具系列来配合机械臂和物流运输平台的运转。新的设计旨在优化海底捞智慧后厨系统以及用户体验,同时提升产品视觉化外观以及不同菜品的呈现方式。客户希望新的设计可以体现品牌形象以及凸显海底捞在市场中创新的领导地位。

1 / FILLING

     备菜装盘 

  • The tableware needs to accommodate all the dishes in the Central Kitchen.

2 / TRANSPORT 

​     装车运输

  • Put all the prepared dishes into the cabinet which contains rack, and use car transport them to intelligent restaurant. 

3 / RECEPTION

     收货分拣 

  • Check with dishes, deliver them to the intelligent kitchen, and deliver some other foods to normal kitchen.

4 / INTELLIGENT KITCHEN

     智能厨房 

  • Robotic arms take out dishes from the rack of cabinet, and put them on conveyors.

To prepare the freshly made dishes.

5 / DISHES EXPORT

​     出菜端口

  • The chef will take over dishes from the end of conveyor and double check with the display. Sometimes they had to manually adjust dishes.

6 / SERVING DISHES

​     上菜传菜

  • Serving robot will serve dishes automatically, and waiter or waitress will support robot during peak times.

7 / PLACEMENT ON TABLE 

​     桌面摆放

  • Waiter or waitress will organize tableware and save more space for new dishes to bring a good dinning environment for customers.

8 / CLEARING TABLE

     餐桌清理 

  • Clean up the table at once after customers leaving.

9 / COLLECTION

     餐具回收 

  • Collect all kinds of tableware and sort out the tableware of Central Kitchen.

Dishwashing Room

店内清洗 

  • To wash the normal tableware of intelligent restaurant.

10 / TRANSPORT 

       ​装车运输

  • Put all the empty tableware into the storage box, and use car transport back to the Central Kitchen. 

11 / CLEANING

       餐具清洗 

  • Use pipelining dish-washer to clean up and dry the tableware to prepare for the next time.

I used the journey map of intelligent tableware to analyze research findings and summarize insights.

The convex & concave design of plate and cover can ensure the stability of stacking during the process of logistics.
